3 Ingredients Delicious Recipes

Today I’m sharing with you how I eat on a typical day. I like to keep it simple, especially on busy days! These are easy, healthy, and delicious recipes made from just about three ingredients for each meal.

Ready?! Let’s do this!

Serves 1

¾ cup oats
any fruit toppings
coconut sugar
1 sweet potato
1 cup chickpeas
1 avocado
lime or lemon
1 small bag baby carrots
2 cups mixed greens
nutritional yeast
4 cups broccoli florets


  1. For breakfast, cook the oatmeal as desired, or you can follow my instructions in this video
  2. For lunch, slice the sweet potato and toast the slices in the toaster (for 5-7 minutes on medium high) while you mash the avocado, chickpeas with the seasonings you like. Garnish with fresh chopped cilantro!
  3. For dinner, steam the baby carrots, with broccoli for about 10 minutes. Strain the veggies when they are ready. Prepare a bed of fresh mixed greens and top it with the steamed veggies, avocado, and nutritional yeast.
