5 Butternut Squash Recipes

Today, I’m sharing my go-to butternut squash recipes. They’re super easy to make and require few ingredients to taste amazing! Let’s cook.

Serves 1



3 cups Spiralized butternut squash
1/4 cup green onion

Dressing: (blended)
1/4 cup soaked cashews
Juice of 1/2 lemon
Salt & pepper


  1. With a spiralizer make noodles from the butternut squash.
  2. In a blender place all the dressing ingredients and blend really well.
  3. In a bowl add the noodles, the green onion and the dressing. Mix and enjoy!



Mixed greens
2 cups cooked butternut squash cut into medium pieces
1/4 cup cranberries
2 tbsp green onion
1 apple
Bunch of hemp seeds
Juice of ½ lemon
1/2 tbsp olive oil
1/2 tbsp rice vinegar
Salt & pepper
Chopped jalapeno or serrano (optional)
Crushed walnuts


  1. In a bowl mix all the ingredients, mix really well.
  2. Serve and enjoy!



2 cups butternut squash cut into medium pieces (cooked)
2 tbsp green onion
2 tbsp jalapeno
3-4 cups veggie broth
½ cup coconut milk
2 dates
1 tsp curry powder
Dash of turmeric powder
Dash of oregano
Dash of paprika
Salt & pepper
Serve with parsley and paprika


  1. In a pot spray avocado oil and heat it up and add the green onion and jalapeno. Cook for 1 minute then add the veggie broth and stir.
  2. After 2 minutes add the coconut milk and the butternut squash, stir again. Cover with a lid and let it simmer for 5 minutes.
  3. Season with salt and paprika and cover again.
  4. Pour the soup into a blender and blend until smooth. Season with a dash of oregano, turmeric and curry powder, add the dates and blend again.
  5. In a bowl serve the soup and sprinkle with pepper, cayenne and top it off with parsley.



2 cups of butternut squash (cut in thin slices)
Avocado oil
Dash salt
Dash pepper
Dash oregano
Dash paprika


  1. Cut the butternut squash in thin slices (like french fries)
  2. Place them in the air fryer and season with salt, pepper, paprika, oregano. Cover them in avocado oil and mix them all together.
  3. Cook them at 400F for 15 minutes in the air fryer.
  4. Take them out and enjoy them with ketchup!



2 cups shredded butternut squash
1 egg
4 tbsp oat flour
¼ cup green onion
Salt and pepper to taste
Onion powder to taste
Vegan mozzarella


  1. In a bowl mix the butternut squash, the flour, the egg and the green onion. Season with onion powder and continue to mix really well.
  2. In a pan spray avocado oil and form patties with the mixture, place them and cook on each side for 3 minutes.
  3. Drizzle vegan mozzarella on top and let it melt.
  4. Serve them and enjoy!

Butternut squash might be fall’s most versatile vegetable. Perfect for any fall dish, it’s creamy and sweet and it makes for a healthy, flavor-packed main dish.
