Mediterranean Chicken Salad

There’s something about Mediterranean flavors that makes a meal feel both refreshing and comforting. This easy chicken salad is loaded with crisp veggies, tender golden chicken, and a zesty dressing that ties it all together. It’s the perfect healthy lunch or light dinner, especially during warmer months when you crave something nourishing and satisfying.

Whether you’re meal-prepping or making something quick for the family, this salad is a go-to. And the best part? You only need one pan, one bowl and my favorite kitchen tool that makes everything easier…the veggie chopper. An absolute must-have, it cuts everything into tiny, even pieces in seconds and comes with different blade sizes depending on the texture you want.

Serves 2

Ingredients:

For the salad:

  • 2 boneless skinless chicken breasts
  • Salt, pepper, garlic powder, Italian seasoning
  • 1 tbsp olive oil (for the chicken)
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion
  • 1/4 cup kalamata olives
  • Handful of fresh basil, chopped

For the dressing:

  • 2 tbsp olive oil
  • 1 tbs red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 cup cottage cheese
  • Salt & pepper, to taste

Method:

1. Season the chicken with salt, pepper, garlic powder, and Italian seasoning. Add olive oil and mix well to coat.

2. Cook the chicken in a pan, I use the Made In Ceramic pan, over medium heat until golden and cooked through. Let it rest before slicing.

3. Chop the cherry tomatoes, cucumber, red onion, and kalamata olives using your favorite chopper or by hand.

4. In a small jar, mix the dressing: olive oil, Dijon mustard, salt, and pepper. Shake until well combined. Add the cottage cheese and shake again.

5. Chop the fresh basil and cut the chicken into bite-sized pieces.

6. In a large bowl, combine everything: veggies, chicken, dressing, and basil. Toss until well coated and serve immediately or store in the fridge.
