Berry Coconut Parfait

Red, White, and Blue! From family get togethers to the fireworks shows at the park, there’s a few things that truly personify the spirit of the 4th of July but let’s not kid ourselves as with any holiday, it’s also about the desserts. So, Edgar and I decided to sweeten up this years celebrations with this red, white and blue berry parfait recipe. Perfect summer dessert recipe that will totally win over your guests.

Serves 1

1 cup pecans
1/4 cup dates
1 tsp of cinnamon
1 can of coconut milk (overnight cream consistency)
1 tbsp maple syrup
1 cup blueberries
1 cup strawberries

1.Place the pecans, dates and cinnamon in a food processor and process until broken down into crumbs.
2.Using a spoon, scoop out the cream from the can and place it in the processor. Break down until it has a whipped consistency.
3.Divide crumbs into the mason jars, top with the coconut cream and add the strawberries, blueberries on top.
4. Drizzle with maple syrup and enjoy!

*Another way to serve this dessert is in a large bowl. Place the berries, serve the coconut cream on top and drizzle maple syrup and crumbs.
