High Protein Meal Prep

As a busy mom of two, I’ve found that meal prepping on Sundays is a game-changer for starting the week off smoothly. By preparing a few meals and side dishes ahead of time, I can save time and ensure that we’re eating healthy throughout the week. Plus, it’s a great way to reduce stress during busy weekdays!

I love using my Sundays to prep these easy and nutritious recipes. They can be stored in the fridge or freezer in airtight containers, making them convenient for quick meals. Now, let’s dive into the recipes, starting with my favorite—Breakfast Egg Muffins.

1. Breakfast Egg Muffins

These breakfast egg muffins are a perfect grab-and-go option for busy mornings. Packed with protein and flavor, they’ll keep you satisfied until lunchtime.


  • 6 whole-grain muffins
  • 9 eggs
  • 4 green onions, chopped
  • Salt and pepper, to taste
  • Herbs de Provence, to taste
  • 1 lb grass-fed beef
  • 6 slices cheddar cheese


  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, crack 9 eggs and season with salt, pepper, and chopped green onion. Whisk until well combined.
  3. Pour the egg mixture into a greased baking dish and bake for 15 minutes, or until set.
  4. While the eggs are baking, season the ground beef with salt, pepper, and herbs de Provence. Form into 6 patties.
  5. Heat a skillet over medium heat and cook the beef patties for 2-3 minutes on each side, until cooked through.
  6. Place a slice of cheddar cheese on top of each beef patty and let it melt.
  7. Remove the baked eggs from the oven and cut into 6 slices.
  8. Split the whole-grain muffins in half and spread butter on both sides.
  9. Assemble each muffin with a slice of baked egg and a beef patty with melted cheese. Let cool slightly, then wrap each sandwich in aluminum foil.
  10. When ready to eat, simply heat it up and add a drizzle of hot sauce for extra flavor.

2. Sheet Pan Chicken and Veggies

This chicken with veggies dish is a hearty and nutritious option for lunch or dinner. It’s packed with flavor and easy to customize with your favorite vegetables.


  • 5 sweet potatoes
  • Olive oil
  • Salt and pepper
  • 4 bell peppers, sliced
  • 1 onion, julienned
  • 3 pounds chicken breast
  • Chicken seasoning: oregano, cumin, chili powder, garlic powder, paprika


  1. Slice the sweet potatoes and coat with olive oil, salt, and pepper. Spread them on a baking sheet.
  2. Roast in the oven for 30 minutes, turning them over at the 15-minute mark.
  3. In a bowl, mix sliced bell peppers, julienned onion, and chicken pieces with olive oil and chicken seasoning.
  4. Spread everything on a baking sheet and roast in the oven for 20 minutes.

3. Zucchini Mexican Style

This veggie bowl is a simple and delicious side dish that pairs well with any meal. It’s packed with nutrients and flavor.


  • 1/2 onion, sliced
  • 3 tomatoes, diced
  • 3 zucchini, sliced


  1. In a saucepan, cook the sliced onion, diced tomatoes, and sliced zucchini with olive oil, salt, and pepper until the zucchini is soft.
  2. Add cilantro when you’re ready to eat for extra flavor!

4. Peanut Butter Protein Balls

These peanut butter protein balls are a satisfying snack packed with protein and flavor. They’re perfect for a quick energy boost during the day.


  • 1 cup peanut butter
  • 1 cup almond flour
  • 1 scoop protein powder
  • 1/4 cup maple syrup
  • Chocolate chips


  1. Place all ingredients in a food processor and process until well combined.
  2. Roll the dough into balls and place in a container.
