Rawvana Christmas Dinner

Just because you’re vegan doesn’t mean you need to give up all of your Christmas favorites! My family and I love making plant-based Christmas dinners that are delicious and full of familiar holiday flavors. Here are some of our favorite recipes!

Serves Varies

Mashed Potatoes

5 potatoes
small bunch of coriander
1 cup almond milk
salt and pepper to taste


  1. Boil the potatoes until they’re soft, around 15 minutes. Meanwhile, chop the coriander.
  2. Place the boiled potatoes in a bowl and remove the skins. Discard the skins.
  3. Smash the potatoes along with the almond milk, cilantro, and salt and pepper to taste.

Elbow Pasta

1 bag of quinoa pasta (substitute 4 cups of your favorite uncooked pasta if you prefer)
1 Anaheim pepper
1 garlic clove
small bunch of coriander
1/2 serrano pepper
1/4 white onion
1 cup soaked cashews


  1. Boil the pasta along with a pinch of salt according to package directions, or until it’s done to your liking.
  2. Meanwhile, blend all of the other ingredients with enough water to create a rich but creamy consistency.
  3. Strain the finished pasta, then gently toss the pasta with the creamy sauce. Yum!

Plantain Empanadas

2 plantains
1 cup pre-cooked beans


  1. Cut the plantains into small pieces, then boil them for 10 minutes or until they’re soft.
  2. Meanwhile, smash the beans into a thick paste.
  3. Remove the plantains from the water and smash them until they’re smooth.
  4. Form a small handful of the plantain dough into a ball, then smash it smooth until it’s the shape of a small tortilla.
  5. Place a spoonful of mashed beans on the plantain tortilla. Fold it in half to form an empanada, being sure to gently pinch the edges shut.
  6. Repeat steps 4 and 5 until you’ve used up all of the plantain dough.
  7. Bake the empanadas at 350 degrees Fahrenheit for 20 minutes. Turn them over and bake for another 20 minutes.

Christmas Salad

2 apples
2 medium carrots
1/4 cup raisins
1/4 cup cashews
2 dates
1/4 cup water


  1. Cut the apples into small bite-sized pieces. Shred the carrots.
  2. In a bowl, mix together the cut apples, shredded carrots, and raisins.
  3. Blend the cashews, dates, and water together to form a dressing. Pour it over the salad and toss to combine. Enjoy!
